3 large carrots, peeled and shredded
2 crisp apples, cored and shredded or thinly sliced
¼ cup raisins or dried cranberries
¼ cup chopped walnuts or pecans
2 tablespoons fresh parsley, chopped
3 tablespoons fresh orange juice
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1 teaspoon honey or maple syrup
¼ teaspoon salt
¼ teaspoon black pepper
Combine shredded carrots, apples, raisins, and nuts in a large bowl.
Whisk together orange juice, lemon juice, olive oil, honey, salt, and pepper.
Pour dressing over salad and toss gently to coat.
Stir in fresh parsley.
Taste and adjust seasoning if needed. Chill 10–15 minutes before serving.
Keep dressing separate if making ahead to prevent apple browning.
