A refreshing, crisp salad of shredded carrots, apples, raisins, and nuts tossed in a bright citrus dressing.

Ingredients

  • 3 large carrots, peeled and shredded

  • 2 crisp apples, cored and shredded or thinly sliced

  • ¼ cup raisins or dried cranberries

  • ¼ cup chopped walnuts or pecans

  • 2 tablespoons fresh parsley, chopped

  • 3 tablespoons fresh orange juice

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon olive oil

  • 1 teaspoon honey or maple syrup

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Instructions

  • Combine shredded carrots, apples, raisins, and nuts in a large bowl.

  • Whisk together orange juice, lemon juice, olive oil, honey, salt, and pepper.

  • Pour dressing over salad and toss gently to coat.

  • Stir in fresh parsley.

  • Taste and adjust seasoning if needed. Chill 10–15 minutes before serving.

  • Keep dressing separate if making ahead to prevent apple browning.
