1 lb (450 g) beef sirloin or beef chuck, diced
2 tablespoons olive oil
1 medium onion, chopped (150 g)
4 cloves garlic, minced
1 tablespoon tomato paste
1 can crushed tomatoes (14 oz / 400 g)
1/2 cup (120 ml) beef broth
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon dried Italian seasoning
1/2 teaspoon chili flakes (optional)
12 oz (340 g) pasta (penne, rigatoni, or fusilli)
1/2 cup (50 g) grated Parmesan-style cheese
2 tablespoons fresh parsley or basil, chopped
Cook pasta in salted boiling water until al dente. Reserve some pasta water and drain.
Brown beef in olive oil over medium-high heat. Remove and set aside.
Sauté onion until soft, add garlic and tomato paste, and cook briefly.
Add crushed tomatoes, beef broth, seasonings, and return beef to the pan. Simmer until tender.
Add pasta to the sauce and toss, adjusting consistency with pasta water if needed.
