A creamy, cheesy baked casserole featuring tender chicken, caramelized onions, and orzo pasta inspired by classic French onion flavors—perfect for a comforting family dinner.

2 tablespoons olive oil
3 large yellow onions, thinly sliced (about 4 cups)
1 teaspoon salt, divided
1/2 teaspoon black pepper
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 1/2 cups low-sodium chicken broth
1 cup whole milk
1 teaspoon dried thyme
2 cups cooked chicken breast, shredded
1 1/2 cups uncooked orzo pasta
1 cup shredded mozzarella cheese
1 cup shredded Gruyère cheese (or Swiss cheese)
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped

Instructions

  • Heat olive oil in a skillet over medium heat. Add sliced onions and 1/2 teaspoon salt. Cook 25 to 30 minutes until caramelized.

  • Add minced garlic and cook 30 seconds. Stir in flour and cook 1 to 2 minutes. Gradually whisk in chicken broth and milk. Add remaining salt, pepper, and thyme. Simmer until slightly thickened.

  • Preheat oven to 375°F (190°C). Stir shredded chicken and uncooked orzo into the sauce. Transfer to a greased 9×13-inch baking dish.

  • Top with mozzarella, Gruyère, and Parmesan cheese.

  • Cover with foil and bake 25 minutes. Remove foil and bake 10 to 15 minutes until bubbly and golden. Let rest 10 minutes before serving. Garnish with parsley.

Notes

For extra richness, add an additional 1/4 cup broth if the casserole appears dry before baking. Store leftovers refrigerated up to 4 days. Reheat gently with a splash of broth or milk to maintain creaminess.
